Drag and drop while editing

When editing an email name, I pressed the cursor on the old address to get the 'bubble' to move the cursor to change a character, and the field started to drag. I ended up having to delete and re-enter the address instead of changing a couple of characters.

Shouldn’t drag and drop be turned off in edit mode?

I just tried what you described. Yes, that can be frustrating. There are two things at play here. Drag and drop of the entire 1Password field, and drag and drop of the text within the field you are editing. Apple handles the one inside the field you are editing, but I believe we are causing the entire field (label, text, and all) to drag. We will look into this to see how this can be improved.

FYI, on an iPad if you two-finger drag on the keyboard, you can move the cursor that way. I find it much easier than using the bubble.
