Editing in a Category drops you back to 'All Items'
For example, select the credit card category, edit a credit card, save the edit and instead of being dropped back into the Credit Card category, you're dropped into All Items.

You have not said what version of the 1Password beta you are using. The release notes for beta 9 (recently released) include this:
Fixed an issue where deleting an item caused the sidebar focus to shift to All Items. {apple-issues#721}
While that does not refer to your exact circumstances I'm guessing it might also resolve your issue. If you're on beta 9 and still have the issue please post again.
